Happy Saturday! It’s a great day for monster cookies, and these are our favorite!
Last week, we delivered a big batch to Nana’s office at the high school where she works, as per back to school tradition. These are a crowd pleaser, and the recipe makes a big, big batch. Keep this in your back pocket for potlucks, birthdays, and gatherings in general.
Speaking of school, the original recipe came from one of Jason’s former colleagues. Whenever these appeared in the teachers’ lounge, rumor of them spread like wildfire. The story goes that you could see teachers slipping out of their classrooms, leaving students unattended, to rush down, no matter the time of day, to secure their cookie(s). One time, Jason brought one home to me. Since then, I have made hundreds to share with my own colleagues, friends, and family. The recipe below is modified a bit from the original, but remains entirely delicious.
Here’s what you’ll need:
- 1 C butter
- 1 lb. of brown sugar (this is half of a standard-sized bag)
- 2 C granulated sugar
- 6 eggs
- 3 C creamy peanut butter
- 2 tsp. vanillaa
- 2 tsp. light corn syrup
- 1/2 lb. M&M’s
- 4 tsp. baking soda
- 9 C quick cooking oats
- 1/2 lb. chocolate chips of choice
Here’s what you’ll do:
Find the largest bowl you own, because the ingredients pile up high! I use my stand mixer for this one.
Cream the butter and sugar, and then add the eggs and peanut butter. When smooth, add the vanilla & corn syrup.
In a separate bowl, sprinkle the baking soda over the chocolate chips to coat them. Then, add these to the batter and mix in. Next, add the M&M’s.
Finally, add in the oats 2 or 3 cups at a time. You may need to knead in the last cup with your hands.
I typically chill my cookie dough for a few hours or overnight. This helps the cookies hold their shape while they bake.
When you are ready, use an ice cream scoop to place rounded dough on an ungreased cookie sheet. You may put two sheets in the oven at once.
Bake at 350 degrees for 10 min. The cookies may not look done, but take them out anyway and allow them to cool. They will be soft and lovely.
