If your neck of the woods is anything like ours, your days are sunny, dry, and HOT. 90 degree weather does not inspire me to turn on the oven. So today instead, I have a favorite little treat that is sweet and fun and requires no baking. Enjoy these Butterscotch Oatmeal Bites!

Here’s what you’ll need:
1 stick of butter
2 C of sugar
1/2 C of milk
1 C smooth peanut butter
2 Tbsp. maple syrup
3 C quick cooking oats
1 C butterscotch chips
Reese’s pieces, if you like
What you’ll do:
- Melt the butter in a medium sized saucepan. Add the sugar and milk and whisk well. Raise the heat and bring to a boil. Boil for one minute, and then take it off the heat.
- Whisk in the peanut butter and maple syrup.
- Then, stir in the oats and butterscotch chips.
- Set out a large piece of foil or parchment on the countertop. Drop spoonfuls of the mixture onto the foil. Then, “dot” with Reese’s pieces if you are so inclined. As they cool, they will harden a bit. Enjoy!
