Summer Dump Cake.

So simple. So delicious!

Nothing like summer fruit

Here’s what you’ll need:

-3 ish cups of sliced fruit (frozen or fresh)

-8 tablespoons of melted butter

-1 box white or yellow cake mix

-1/2 cup oats

-sprinkling of granulated sugar

-zest of 1 lemon (optional)

Here’s what you’ll do:

Preheat your oven to 350, and spray a 9×12 baking pan. Then, pile in your fruit. Sprinkle the fruit with granulated sugar, whatever amount is suitable to your desires. If you like lemon zest, mix it here with the sugar. In a separate bowl, combine the cake mix and oats. Pour in half of your melted butter. Use a fork and/or your finger tips to make rough crumbles of the mixture. Then, sprinkle this mixture all over the fruit. Finally, drizzle the remainder of the butter on top. Bake at 350 degrees for 45 minutes. You are looking for a golden crust and bubbling fruit. Allow it to settle and cool for ten minutes, and then serve with frozen yogurt or ice cream. It is so good! Hints:

-Some traditional dump cake recipes call for pie filling in lieu of fresh or frozen fruit. I think this makes it quite sweet, and the texture becomes “soupier.”

-We used strawberries, cherries, and blueberries for this one. But, peaches and apples are delicious in this type of dessert, as well. I personally love peach and blueberry together. And though I haven’t tried yet, I think an apple and cranberry combo might be delightful, too.

-If you are using frozen strawberries, steer clear of “whole” berries. Opt for sliced instead.

-If you are a nut lover, consider adding some chopped pecans or walnuts to your cake mix/oat topping. Yum!
